Abstract

The purpose of this article is to discuss the problems related to oil production in the Kingdom of Granada during the early modern age. To that end, research has been carried out on three main topics: firstly, a study of the artefacts and a description of the architectural characteristics and the crushing and pressing mechanisms; secondly, preliminary information about the experts in charge of the procedures, the millers and other oil mill operators, and thirdly, the main profiles of the owners within the Kingdom, attaching special importance to the role of the noble classes and the local clergy.
