Análisis de la composición en vitaminas A, E, C, B12 y fólico en productos comerciales congelados precocinados

El objetivo de este trabajo consistió en la determinación de vitaminas en alimentos precocinados congelados y se engloba dentro del proyecto de elaboración de las Tablas de Composición de Alimentos Españoles.
El escoger este tipo de alimentos es debido al hecho de que los precocinados constituyen una parte cada vez más importante de la dieta actual, por lo que es de gran importancia el conocimiento de su composición en vitaminas, sobre todo si tenemos en cuenta, las pérdidas de las mismas que se producen en la preparación, congelación y conservación de este tipo de productos.
