Estudio comparativo de la digestibilidad verdadera del aceite de oliva con otras grasas
Abstract
Se estudia:
1º - El coeficiente de digestibilidad verdadero de una serie de grasas animales y vegetales, en ratas adultas, por el método de DEUEL.
Las grasas vegetales son: aceite de oliva (refinado y sin refinar), soja y algodón. De las animales se eligieron manteca de cerdo, mantequilla y margarina.
2º-Comparando el coeficiente de digestibilidad del aceite de oliva con las demás grasas vegetales, se observa que los coeficientes de digestibilidad más elevados los muestra el aceite de oliva de 1,55 grados de acidez, con un valor de 99,3 seguidos de los aceites de oliva de 0,15 y 0,43 de acidez con 98,7 % de digestibilidad, valores paralelos se tienen en el aceite de algodón cuyo valor es 98,5 y el valor más bajo lo presenta el aceite de soja, 93,9.
3º-Dentro del grupo de las grasas animales el valor del coeficiente de digestibilidad más elevado lo presenta la mantequilla, 98,6 que es semejante al de aceite de oliva, seguido de la manteca de cerdo, 98,0, y el más inferior la margarina.
