Abstract
Se estud;a en ratas el valor nutritivo de la proteina de: germen de garrofin y de mezclas de germen d,e garrofín y bagazo de cerveza, germen de garrofín, harina de bellota desengrasada y bagazo de cerveza; y germen de garrofin y harina de bellota desengrasada. Para valorar la calidad proteica empleamos índices químicos, obtenidos a partir del aminograma de cada proteína, han sido: Chemical Score y M.E.A.A. Los índices biológicos han sido C.D.A., V.B., N.P.U. y aumento de peso. El aspecto económico de la formulación de las mezclas proteicas a partir de los citados subproductos se ha analizado brevemente, concentrado en los 'conceptos: precio de la mezcla de subproductos para 100 g de dieta y costo de 100 g de aumento de peso en los animales. Todas las experiencias biológicas se realizaron utilizando lotes de 10 ratas en crecimiento alojadas en células individuales de metabolismo en una cámara termoregulada.
