Abstract

The partial replacement of protein by fat in trout's diet, besides their effect upon the nutritive utilization of protein, can influence the growth rate and the body composition of the animals. When such replacement causes a remarkable reduction of the protein level (up to 38 % of protein in diet), the growth rate decreases significantly. Trout fed on a high fat diet during long time can be sensitive to some degree of fat accumulation, which could have an effect on the physiology of the animal and on their acceptance for human feeding. The insertion of sorne shorts fasting periods is an effective procedure in order to avoid these accumulations by bringing about the mobilization of these accumulations, without any appreciable effect on the growth rate.
