El paciente quemado crítico se caracteriza por presentar un estado de hipercatabolismo e hipermetabolismo severo mantenido durante un largo periodo de tiempo desde la agresión térmica inicial, incrementándose el gasto energético enormemente. La severidad de este estado presenta una relación directa con la extensión de la superficie corporal total quemada, ya que el daño térmico es una importante causa de pérdida de macronutrientes (proteínas) y micronutrientes (vitaminas y elementos trazas) a través de las áreas quemadas…
