Abstract

At the end of the Modern Age olive was booming.  Since the Reconquista, it had been increasing its share in the agriculture of Aragón until defining, by the end of the XVIII century, certain local specialization which still has to coexist with the dominant presence of cereal.  Since the XV century, olive oil production provided surpluses which were commercialized in France and in the bordering provinces of Castilla, but it was not until the XVIII century when appeared the great capitalist plantations aimed for market production.
