Abstract

In this paper we explore the changes in the Mexican coffee exporting structure, based inthe Global Commodity Chain approach. We analyze these changes comparing two differenthistoric contexts: the period where the international market for coffee was regulated, correspondingto the INMECAFE existence, and the deregulation period where this institution disappearedand when the governance structure changes from a producer-driven chain to a consumerdrivenchain, where international traders and toasters are the dominant agents. Producers experiencedthis later years a dramatic fall in margins and incomes, the period of the worst crisis ofcoffee sector in many decades.
